Cottage Cheese Bagels Recipe

Unless you’ve been living under a rock and missed it, I’m going to share with you Bethany Frankel’s cottage cheese bagel recipe. Her video went viral on TikTok this past spring and I’ve been ever so anxious to give it a try. Her recipe is low in carbs and high in protein.


By way of background, Bethenny Frankel is an American entrepreneur, television personality, philanthropist, and author. She cooked up this recipe, and every review expresses how easy it is with a delicious result. It has only three ingredients, not counting the egg wash and toppings, and there is no need for the traditional boiling of the bagel. Just prep dough and bake. Given that I love bagels, I couldn’t wait to get started.


I’ll preface by saying that cottage cheese is not on my list of foods that I enjoy. The texture alone is off-putting to me, but I was committed to following her instructions regardless.


During the process of making the dough, take note that it is a very gooey dough, so flouring your hands when handling the dough is key. Miraculously the dough cooperates.


All in all, the bagels were crispy on the outside and fluffy on the inside. I see now why this recipe went viral. It’s a hit!

Ingredients

For the Bagels:

1 1/4 cup cottage cheese (blended in blender until creamy)

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1 egg, beaten (for egg wash)


Toppings:

Everything bagel seasoning or

Flaky sea salt (big rock salt is the move)

 

Preparation

  1. Preheat your oven to 375°F and place a cookie sheet or pizza stone inside while it heats. (Pro tip: Preheating the sheet helps crisp the bottom of the bagels.)

  2. In a medium bowl, combine the blended cottage cheese, flour, and baking powder. Stir until it forms a sticky dough. It’ll be gloopy—this is normal.

    Lightly flour a clean surface. Use a bench scraper or sharp knife to divide the dough into four equal portions. With floured hands, shape each portion into a ball, then gently press your thumb through the center to form a bagel shape. Add more flour as needed to keep it workable. Place each bagel on parchment paper.

  3. Brush the tops of each bagel lightly with beaten egg. Sprinkle generously with everything bagel seasoning, flaky salt, or toppings of your choice.

  4. Carefully transfer the parchment and bagels onto the preheated cookie sheet. Bake for 25 minutes or until golden brown and crisp. Let cool slightly before serving. (Or don’t.)
