Put It On Toast

Bread toasted, warm, crunchy, smeared with a good quality butter makes for the perfect bite. And wouldn’t you agree, that when we don’t feel well, it’s tea and toast that comforts us.

Today, I’m sharing with you three of my favorite foods on bread that has been toasted.


Of course, the first is the very popular avocado toast. Here I made one that is not only visually appealing but crunchy and tasty.


Simply toast your favorite bread, add mashed avocado (or a dollop of guacamole if you have on hand), sliced hard-boiled egg, thinly sliced red onions and baby arugula. The flavor combinations deliver a nutty, creamy and slightly spicy taste.


When fresh figs are in season, I enjoy this option. Using a bread of your liking (I used rye bread for this one), toast it and dollop fresh ricotta cheese followed by sliced fig. Top with a drizzle of honey and some whole salted pistachios. All in all, this combination is creamy, sweet, salty and crunchy.  

Lastly, I saw something on a cooking show recently that featured Italian tuna belly on toast, with a dusting of a good quality cocoa. The first time I gently dusted cocoa over the tuna, and it was good. But, when I tried it with a bit of a heavy hand, it was amazing!  The combination of the rich and savory tuna with the bittersweet nuttiness of the cocoa created a sophisticated and surprising flavor profile.




Simple to make. Toast sliced French bread or bread of your choice, layer the tuna on bread, and follow with a generous dusting of cocoa. Try it, you’ll like it!
