Snack Bars

These days, when I’m a little bit down, I crave chocolate. Nevertheless, one of my favorite health/power bars  contains no chocolate. That said, you could replace the carob chips, called for in the recipe, with chocolate chips – I dare you! Your palate will enjoy the various layers of textures that include a creamy paste of dates and almond butter, the crunch of walnuts (a great antioxidant), the smooth melt of carob chips and the crispiness of toasted shredded coconut.

Easy to make, these are the perfect bars to fulfill a craving and provide you with a boost. For someone like me (underweight), they are also a great way to increase caloric intake!

By the way, when I fall off the chocoholic wagon, I make these with dark chocolate chips and they are just as yummy!


10 Pitted dates

¾ cup of walnuts 

6 tablespoons almond butter

1 teaspoon vanilla

¼ cup carob chips

2 tablespoons shredded coconut, toasted


Place the dates and walnuts in food processor and pulse until the mixture is reduced to a paste.

Transfer mixture to a small mixing bowl and combine the almond butter, carob chips and vanilla. Mix well.

Turn the mixture out onto a small cutting board and using a spatula shape into a square.

Sprinkle the toasted coconut over the surface of the mixture.  

Refrigerate for one hour. Cut into squares. Store in the refrigerator.
